Daikon soup with meatballs

Ingredients
Servings: 4

  • 1 daikon radish (small)
  • 100 g glass noodles
  • 200 g ground meat
  • 1 spring onion
  • 10 g ginger
  • 1 egg white
  • 1 tsp cornstarch
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp salt 
  • ½ tsp sesame oil
  • 1 l water
  • chopped cilantro to serve

Utensils: cutting board, knife, small bowl, large sauce pan, table spoon, skimmer

Slice spring onion into fine rings. Finely chop ginger and slice radish into thin strips.

Mix ground meat, chopped spring onion, chopped ginger, egg white, cornstarch, soy sauce, sugar, and salt well with a fork until an even consistency is formed.

Boil water. Make small meat balls out of the mixture. Here it helps if hands are moistened with water to prevent the balls from sticking. Alternatively, use two teaspoons.

Now, put the meat balls into the boiling water using a spoon.

The egg white will cause a white foam to appear on the surface. Remove with a skimmer.

Now add radish and glass noodles and bring to a boil. Then, simmer for approx. 4 - 5 min. Season with sesame oil and salt. Top with freshly chopped cilantro to serve.
